When we ship our brisket, we offer a 2 pound Brisket, and a 4 pound brisket. 

The 2 Pound Brisket is cut from a whole brisket, and from the lean end. So if you want lean, order the 2 pound Brisket. 

The 4 Pound Brisket is almost an entire brisket, so it will have some lean and some fatty. When we trim the Brisket down to 4 pounds, we always trim from the fatty end, so the brisket will be mostly lean.
